At the heart of the kitchen is a signature Argentinean wood fire grill and a contemporary modern Australian menu featuring the finest cuts of meat, freshest seafood and an array of shared and larger plates.
Chris Mann brings over a decade of culinary experience to the expert lineup in the kitchen, as well as an exceptional ability to create and combine unique flavours. No stranger to the team at Pony Dining, the talented head chef has been a star addition to the riverside restaurant since 2012. Chris brings a passion for local and seasonal produce to the kitchen, desirous to use Australian produce wherever he can. His philosophy is all about showcasing natural ingredients and their delicate flavours without overhandling, and he hopes to instill this appreciation of fresh, uncomplicated fare in his chefs. ‘Fresh produce is everything to me,’ Chris said of his food philosophy. ‘How a chef treats produce, from the minute he selects it, to when it enters his kitchen, is prepared and is served on the plate, should be reflected in the taste and appearance of the final dish. Even an Oyster, that tiny bit of indulgence that is over in a split second of eating, takes 3 years to grow and develop! Those tiny little herbs that we use as a garnish? They are just 2 weeks old and can be destroyed or mishandled in a second.’ ‘The majority of my signature dishes feature just 3 or 4 components executed perfectly,’ he said of his personal style. ‘Take care of your produce and it will sing on the taste buds.’
Pony Dining is located on the lively riverfront precinct of Eagle Street Pier and offers premier waterfront dining boasting unrivalled views across the Brisbane River. World class restaurant designers from Woods Bagot, transformed the restaurant into the stunning dining space it is today. Pony Dining features a large open kitchen, iconic outdoor dining, garden terrace, and leading event spaces. A metal ribbon, reminiscent of a horse shoe and the curves of a lasso loop, drapes from the ceiling.
Our restaurant manager, Callum McCrorie, is a consummate professional who thrives on the high demands of a great restaurant, which is why he feels completely at home at Pony. From being the first point of contact for every one of our guests, to mentoring and working with a young and keen team as well as working side by side with our chef to develop and evolve the menu and service at Pony dining. “The move to Pony dining has been an exciting one.
